This has to be one of the healthiest and most delicious chili dishes I have ever created. I made it for Sunday dinner and everyone loved it. You can find this yummy recipe at Little House of Veggies. I doubled the recipe since I was feeding 8 adults. With red & green peppers, zucchini, onions, garlic, kidney & pinto beans, diced tomatoes, chili pepper, cumin, coriander & dried mustard you have some amazing flavors coming together. I couldn't find Yves Meatless Grounds that Morgan used, so I subsituted Lightlife Smart Ground (Mexican Style) from Whole Foods and it worked perfectly. I doubled the recipe on everything but the Smart Ground and only used 1 package. Serve this Veggie Chili with Morgan's Whole Grain Cornbread and a big salad. All Morgan's recipes are printable, which makes it super easy to print and go. ENJOY!!
